Moroccan Chicken Tagine with olives & preserved lemon, in onion Sauce, is another classic of Moroccan cuisine. This dish has a few steps for the chicken to infuse with fresh lemon and salt for a few hours, then marinate with spices and cook over low heat. This is then roasted and garnished. The dish is popular for special occasions, it is also enjoyed more often as most of the preparation can be done ahead of time.
